These Ice Cream Cookies are a sweet idea that won”t melt in the summer heat! An ice cream cone cookie that is made out of gumdrop fruit slices and wafer cookies! No need to heat up the oven – use store-bought wafer cookies for the “cone”, a gumdrop fruit slice dipped in candy coating, add a few sprinkles and you have a cute little cookie!
For your Ice Cream Cookies you will need:
- Gumdrop Fruit Slices
- White candy coating wafers
- Rainbow jimmies sprinkles
- Wafer cookies
- Red Sixlet Candies
1. Melt candy coating wafers according to package instructions.
2. Dip the rounded edge of the gumdrop fruit slice candy into the candy coating.
3. Sprinkle the rainbow jimmies immediately on top of the candy coating.
4. Place a red Sixlet candy on top for a cherry.
5. Place on parchment or wax paper to dry.
6. Cut a long triangle from a wafer cookie.
7. Attach to the gumdrop fruit slice with melted candy coating.
8. Place on parchment or wax paper to dry.
Melt candy melts to package instructions. I like to pour some into a cup where I can dip the cookies. Lift cookies out with a fork.
Place on parchment paper to dry.
Dip the Oreo about 3/4 way into the blue candy melts.
While the blue coating is still wet, dip the end into crushed graham crackers.
While wet, place goldfish cracker in the middle of the cookie.
Place a couple of pearl sprinkles for bubbles on the cookie.
